Managing leftovers:
Priti explains, "Wedding food is prone to wastage because the caterers don't want to run out of food while serving and people take more than they can eat. The best thing to do is get RSVPs from invitees and only arrange for as much food as required.
Also, prepare food on the spot and not have it kept ready. That way food can be prepared only when needed and the rest (raw materials) can once again be kept in the freezer."
Anand adds, "Go for the self-help buffet than food just being plunked on the plate by caterers. The guests can thereby control the food needed to be consumed and there are less leftovers."
Also, the edible leftovers can be donated to a charitable home. "Hire caterers who have a tie-up with charities. They can give away all the edible food. The rotten leftovers should be composted in pit dug in a field to decompose in the soil or alternatively give them to the animal kingdom," advises Priti.
