Green Weddings: Eco-friendly Recipes

Most people cringe at the thought of the menu at a green wedding. They immediately start thinking of fruit chaats and sprout salads. The fact is that they couldn't be further from the truth if they tried. Green recipes don't mean only raw fruits and vegetables (although there is nothing more healthy and environment friendly than that!).

Here are some green recipes from celebrity chef Tarla Dalal and Prism Healing Institute.

Mango Mousse Mango Mousse

Ingredients:
1 mango
1/3 banana
A pinch of cardamom powder and cinnamon powder
A few almonds, sliced

Method:
  • Blend together the mango and banana with two ice cubes or cold water.
  • Garnish with cardamom powder, cinnamon powder and sliced almonds.
  • Keep refrigerated. (Serves 1).

Veggie Cream Cheese Canapés Veggie Cream Cheese Canapés

An innovative, easy to make and healthy recipe which can be served in a jiffy.

Preparation time
10 minutes. No cooking required. Makes 10 canapés.
Ingredients:
5 brown bread slices, lightly buttered
To be mixed together for the topping
1 tsp finely chopped dill (suva bhaji)
1/4 cup grated paneer (cottage cheese)
2 tbsp fresh curds
1/4 cup finely chopped cucumber
Salt and freshly crushed pepper to taste

For the garnish
Sliced olives
Few sprigs of dill leaves

Method:
  1. Trim the edges of the bread slices.
  2. Spread the topping evenly over the buttered side of the bread slices.
  3. Cut each slice into 2 triangles, and serve garnished with the sliced olives and dill sprigs.

Tarla Dalal Handy Tip: After trimming the bread, crust should not be thrown away rather used to make other delicious recipes like tikkis, kebabs etc. Soak the crust in water, squeeze out the water and then use it.
