Winter warmers

With a drop in temperatures, it's time to enjoy the festive season with your beloved one. Sip these different concoctions of soups and broths to make the most of this very special part of the year!

Couples passion
Leek and mushroom soup


Leek and mushroom soup Ingredients:
butter - 1tbsp
garlic - 1tsp (chopped)
onion - 2 nos (chopped)
leeks - 2 stalks (sliced)
flour - 2 tbsp
stock / water - 3-4 cups
mixed herbs - 1/2 tsp
salt - to taste
pepper powder - to taste
potatoes - 2 nos (diced)
parsley leaves - a sprig for garnish

Method:
  1. Heat butter in a pan; sauté the garlic and onions for a few seconds.
  2. Add in the leeks, mushrooms, potatoes, salt, pepper, herbs, flour, and stock / water.
  3. Bring to a boil, simmer for 10 mins.
  4. Cool, puree and strain the soup
  5. Bring to boil and check the seasoning.
  6. Serve hot, garnished with parsley.

Chef's variation : Try adding some boiled chicken (shredded) into the same recipe for the non - vegetarians. Prawns and fish can be added too.

Spicy Thai soup


Spicy Thai soup Ingredients:
coconut milk - 2 1/2 cups
Thai ginger - 1 tsp chopped ( galangal )
lemon grass - 1 stalk (chopped)
thai red curry paste - 1 tbsp (dissolved in 1/4th cup water)
turmeric powder - 1/4 tsp
oil - 2tbsp
mushrooms - 150gms (diced)
celery - 2 stalks (chopped)
salt and pepper - to taste
stock / water - as required
corn flour powder - 2tbsp (as solution)

Method:
  1. Heat oil in a pan, sauté the galangal , add in Thai red curry paste, mushrooms, celery, stock / water, seasonings to taste, bring to boil and simmer for 5 mins.
  2. Cool, puree, strain.
  3. Check for seasonings and thicken with coconut milk and corn flour solution.
  4. Serve hot.

Chef's variation : Addition of your choice of vegetables like zucchini, pepper, cauliflower, potatoes, carrots, etc make a good choice too.
