Yum Yum Chinese

Sweet And Sour Prawns
Ingredients:
Prawns
1 tsp salt and 1 tbsp lemon juice
Egg
Corn flour
Garlic paste
Ginger paste
Water
Oil for deep-frying
Oil
Garlic
Onions coarsely chopped
Capsicum, chopped to match the onions
250 g (weighed after cleaning)
marinate for 5 minutes and wash
1, slightly beaten

For Sauce, Mix Together:
Corn flour
Vinegar
Salt
Sugar
Orange or pineapple juice
Sherry or dry wine, optional
Soya sauce
Tomatos puree
Celery chopped
Water
2 tbsp, blended with 1/2 cup water
1/4 cup
1 1/2 tsp
1 tbsp
1/4 cup
1 tbsp
2 tsp (or less, if it is very dark)
6 tbsp
2 tbsp or 1/4 tsp celery salt
1 cup
Method:
- Wash the prawns thoroughly and drain out all the water. Mix together the prawns, egg, corn flour, garlic and ginger paste, and enough water so as to have the prawns coated in a thickest batter. Leave thus for half an hour at least.
- Heat the oil and keeping the heat high fry the prawns till brown. Takes about 1 minute. Drain on absorbent paper till required.
- Heat the 2 tbsp oil, and stir-fry the garlic and onion in it over high heat, till the onions look glossy. Add the capsicum and turn around a few times. Add the sauce mixture, and simmer till the sauce thickens and becomes translucent.
- Add the prawns, turn around a few times and serve.
