Finger licking recipes that will add extra spice to your menu. Don't forget the sesame cookies, which is a special this week.
Apple Pie
Ingredients:
500 gm sour apples, stewed
1/8 tsp nutmeg or powdered cinnamon
4 tbsp sugar (or according to taste)
1 tbsp lemon juice (or according to taste)
1 tbsp butter
For Short Crust Pastry
2 cups (240 gm) flour
3/4 cup (180 gm) butter or margarine
1 tsp vinegar
1 egg or 1/4 cup cold milk
1/4 tsp salt
1 tsp sugar
1 tsp baking powder
A pie dish, 20 cm (8'') in diameter
1 tbsp slightly beaten egg or milk to glaze the pie
Method:
Oven temp: 325F / 160C
- Add the sugar, lemon juice and flavouring to the apples.
- Make the short crust pastry with the ingredients. Roll out a little more than half the dough about 1/4 cm (1/8") thick, into a large enough circle, to cover the base and the sides of the pie dish.
- Dust the pastry base with flour, and then fill it with the apples. Dot the filling with butter.
- Roll out the other portion of the dough, as thick, to cover the top of the pie. Wet the edges, and cover the pie, pressing the edges together, to seal. Make a decorative edge by pinching the edges at regular intervals.
- Prick the upper crust with a fork to allow the steam to escape, while cooking. Glaze the surface with the beaten egg, or milk and bake in a pre-heated oven for about 45-60 minutes or until golden. It shrinks away from the sides of the dish when it is done.
- When done, remove it from the oven and sprinkle with castor sugar or icing sugar.
Sesame Cookies
Ingredients:
Makes about 20
1/4 cup (60 g) butter or ghee
1/4 cup white sesame seeds (safad til), roasted
1/2 cup (120 g) sugar
1/4 cup, milk
1 tsp vinegar
1 cup whole wheat flour (atta)
1/2 tsp baking powder
1/4 tsp salt
Jam or garnishes of choice to decorate (optional)
Method:
Oven Temp: 375F / 180C
- Heat the 1tsp butter and the til and saute till a light brown. Keep aside.
- Mix the butter, sugar and milk mixture. Add 1 tbsp of the browned til.
- Mix the flour, baking powder and salt together. Add this to the butter mixture and mix well.
- Shape dough into rounds or shapes of your choice. Coat with sesame seeds and place on an ungreased baking tray at least 1" apart.
- Press with the base of a glass or any flat tool.
- Bake in a pre-heated oven for about 15 minutes.
- If garnishing, do so while still warm.
- Serve or cool and store in an airtight jar.
