Merry Christmas
Layered fruit frosted chocolate cake
Ingredients:
1/2 cup butter
1 teaspoon vanilla essence
2 cups sugar
2 cups flour
2 eggs
1/2 cup cocoa
1 cup buttermilk
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup strawberry jam
2 squares unsweetened chocolate
3 tablespoons butter
1/4 cup hot milk
1/8 teaspoon salt
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
Method:
Preheat the oven to 375 f. Grease two 9-inch cake pans and line with wax paper. Beat the butter, vanilla and 1 cup of sugar until light and fluffy. Gradually beat in the eggs. Beat together the cocoa, remaining sugar and 1/2 cup buttermilk, then stir into the egg mixture.
Sift the flour, baking soda and salt. Add to the cocoa and egg mixture in 3 parts, alternating with the remaining buttermilk. Spoon into pans and smooth the tops. Bake 35 minutes, or until toothpick comes out clean. Remove from the pans after 5 minutes. Cool together with jam. For the frostings melt the chocolate and butter over very low heat. Add the hot milk, and salt, and vanilla and gradually stir in sugar until spread able. Frost the top and sides of the cake.
Nut-topped petit fours
Ingredients:
1 cup cold milk
1 pack custard powder mix - 100 gms
3/4 cup butter
2 cup sifted powdered sugar
1 tsp. grated lemon peel
1/2 tsp. vanilla essence
1 rectangular sponge cake, cut into 12 (1 1/2 inch each) squares
2/3 cup coarsely chopped nuts
Method:
Beat together milk and pudding mix just until combined. Cream butter; gradually add sugar, beating until fluffy. Stir in lemon peel and vanilla. Gradually add pudding to butter mixture, beating well. Spread pudding mixture on top and sides of cake squares. Dip tops in nuts. Chill. Top with cherry slice, if desired.
Petit-four squares
Ingredients:
cookie:
1/2 cup butter
1 cup brown sugar
1/2 tsp. vanilla essence
2 cup. flour
1/2 tsp. baking powder
1/8 tsp. salt
1/4 cup chocolate chips
icing:
1 1/2 cup icing sugar
1 tbsp. honey
1/4 tsp. vanilla essence
2 tbsp. milk
chocolate sauce
Method:
Cream 1 cup butter with 1 cup brown sugar. Add vanilla, flour, baking powder, and salt. Mixture will be very dry and hard to handle. Add chocolate chips. Put in greased 9"x13" pan. Bake at 350 degrees for 30 minutes. Then ice with icing sugar, honey, vanilla and milk. Put chocolate sauce over in zig zag pattern.
