Egg-less cakes

Arunasri asks,
I have tried making egg-less cakes but haven't been able to make a good cake. I have a LG 30LTS microwave. Can you please tell me how to bake a good egg-less cake in a microwave?

Dear Arunasri,
Egg-less cake recipe for you.

Egg-less cakes Ingredients
1/2 dates, de-seeded and chopped
1 & 1/4 cup milk
3/4 cup oil
3/4 cup grain sugar
1 cup flour
1 tsp. baking soda (not baking powder)
10-14 nos. walnuts, chopped

Method
Boil the milk in a saucepan. Remove from heat.
Add the dates and let it stand until cool.
When cool, put into a blender or food processor and process or blend until the dates are ground.
Add the oil into blender / food processor and blend / process again until incorporated and mixture becomes thick. Add sugar to the mixture in the blender / food processor and blend until incorporated.
Transfer mixture to a mixing bowl. Sieve flour and baking soda well. Fold in the flour until it is mixed well.
(Note: You can, at this point, add a little more milk in case you find the batter a little thick. The batter should be of pouring consistency like most cake batters.)
Pour batter into a greased glass microwavable dish.
Place in microwave and bake for 10 to 11 minutes on high.
Serve cake warm or cold with chilled vanilla custard for a dessert version of this cake.
Slice and serve.
Try variations like additions of flavored fruits and fillings.

Schezuan sauce

I live in New Zealand and I don't have access to Schezuan sauce. Will you be kind enough to send me the recipe for it?

Dear Suresh,
Recipe for Schezuan sauce:

Schezuan sauce Ingredients
1/2 cup oil
4 garlic cloves; crushed
100 gms shallots (optional), finely chopped
Salt to taste
1/2 tsp Tabasco
1 & 1/2 cup tomato puree
1/2 tsp white pepper
1/2 tsp ground cumin
Ground black pepper to taste
1 cup red chilli paste
2 tbsp white vinegar

Method
In a pan, saute the garlic, hot pepper, shallots, in the oil until the garlic and shallots brown (best over high heat, but don't let the oil burn).
Add the red chilli paste, tomato puree, white pepper and cumin. Lower heat and simmer 5 mins.
In a small cup, mix 2 tsp cold water and Tabasco sauce.
Stir into sauce, stirring constantly. Simmer the sauce for 4-6 mins. The oil should start coming out from the sides in the pan. The sauce should thicken in about a minute or two.
Add in the white vinegar finally and remove from heat and stir into your favorite dish.
Use as required or store in the fridge for a later use.
