Romance in Rome...
[ Italian pasta toss salad ]
Ingredients
Boiled pasta - macaroni / penne etc - 1 cup
Black olives - 3 to 4 nos
Shredded red / green / yellow capsicums - 1/2 no each
Boiled / blanched brocolli / cauliflower - 1/2 cup
For the dressing
Olive oil - 1/2 cup
Chopped garlic - 1 tsp
Fresh basil leaves - 1 tsp chopped
Tomato ketchup - 2 tbsp
Chilli flakes - 1/2 tsp
Lime juice - 1 tbsp
Method
- Boil the pasta of your choice and keep aside.
- To prepare the dressing, mix together all the ingredients for the dressing and toss the pasta, brocolli, peppers in the dressing.
- Keep refrigerated for at least an hour and serve chilled on a bed of crisp assorted lettuce, garnish with black olives.
Chefs variations
- Try sliced mozzarella cheese, sausages, roast chicken in the same recipe for a non-veg variation.
- For seafood lovers - try prawns, lobsters, flaked tuna fish etc in the same salad.
German honeymooners delight!
[ German potato salad ]
Ingredients
Boiled baby potatoes - 1 cup
Chopped garlic - 1 tsp
Chopped onion - 1 small
Chopped chives / parsley leaves - 1 tbsp
Hung curd / yogurt - 1 cup
Salt and pepper to taste
Diced apples - 1 no
Chopped tomatoes / sun dried tomatoes - 1 tbsp
Lime juice - 1 tsp
Method
- Boil and cut the baby potatoes into two pieces each, mix with the parsley or chives, onion, garlic, hung curds, apples and lime juice.
- Mix well and serve chilled garnished with tomatoes.
- Serve on a bed of chilled crisp lettuce.
Chefs variations
- Try a Indian variation, serve chicken tikka, paneer tikka, cauliflower, mushrooms and fish the same way dressed in an unusual salad, spice it up with a dash of green chillies and chaat masala.
Sweet hearts favourite... [ German apple strudel ]
Ingredients
Apples [peeled and diced] - 2 nos
Raisins - 1/4 cup soaked in rum - 2 tbsp
Sugar - 1/4 cup
Butter - 2 tbsp
Cinnamon powder - 1/2 tsp
Filo / puff pastry [readily available] - 200 gms
Egg white - 1/4 cup before baking
To serve with custard sauce
Custard powder - 1 tbsp
Milk - 250 ml
Sugar - 4 tbsp
Method
- To prepare the filling, heat butter, sauté the sugar and the apples for a minute.
- Add in the cinnamon powder and remove.
- Roll out the filo / puff pastry and fill it with the filling, roll and lightly cover with the egg white and bake in a pre heated oven at 150 degree centigrade for 10-12 minutes.
- Serve sliced with the custard sauce - to prepare the custard, boil milk add in the sugar and dissolved custard powder and cook for 5-7 minutes and serve warm with the apple strudel.

- Try filling with strawberries, walnuts, dates, prunes etc.
