Melon salad in lime and honey dressing


Melon salad in lime and honey dressing Ingredients:
musk melon - 1 cup (balls)
apples - 2 nos (sliced)
strawberries - 8-10 nos (quartered)
lime juice - 2 tbsp
honey - 2 tbsp
ginger juice - 1 tsp
pistachios - 10-15 nos
mint leaves - a sprig
melon bowl - to serve in
castor sugar - 1 tsp

Method:
  1. Prepare a muskmelon bowl by scooping out the pulp.
     
  2. Toss together the melon balls, apples, strawberries along with the honey, ginger juice, lime and mint.
     
  3. Serve it in the melon bowl and dust with castor sugar.
     
Chef's variation : Try a variation with assorted seasonal fruits of your choice and dressing with fruit syrups.

Minted grape and litchi salad


Minted grape and litchi salad Ingredients:
grapes red - 1/2 cup
grapes white - 1/2 cup
mint leaves - 8-10 nos
sugar syrup - 1/4 cup
rum - 2 tbsp
litchis - 1 cup (deseeded)

Method:
  1. In a bowl toss together the grapes, litchis, mint, sugar syrup, rum and place in chilled bowls, rimmed with castor sugar.
     
  2. Serve chilled with your choice of ice-cream and fruit syrups.
     
Chef's variation : Try an assortment of tinned fruits and crushes with the unusual combination, like blue Curacao syrup, with strawberries and grapes served chilled with chocolate chip sauce.

Pear and yogurt delight


Pear and yogurt delight Ingredients:
pears - 6-8 nos (diced)
peaches - 4-5 nos (diced)
pineapples - 6-8 slices (cubed)
yogurt - 1 cup (whipped)
mango pulp - 1/4 cup
lemon slice - 2 nos (garnish)

Method:
  1. In a bowl mix together the pears, peaches, pineapple, along with the mango pulp and yogurt.
     
  2. Chill and serve in cold glasses.
     
  3. Garnish with lemon slices.
     
Chef's variation : Try a variation with the sautéed mushrooms and cheese and peppers in yogurt sauce, ideal choice for cocktail parties, etc.
