Baked pears with cocktail sauce
Ingredients:
pears - 3-4 nos
brown sugar - 1 tbsp
honey - 2 tbsp
cinnamon powder - 1/4 tsp
butter - 2 tbsp
brandy - 2 tbsp
For cocktail sauce:
mayonnaise sauce - 1/2 cup
orange crush - 2 tbsp
mint leaves - 8-10 nos
almond flakes - 2 tbsp
lettuce leaves - 1/2 bunch
Method: (to prepare the pears)
- Peel the pears and coat it with brown sugar, honey, cinnamon, butter, brandy and bake in the oven at 150°c for 10 mins.
- Remove from the oven cool.
- To prepare the sauce, mix together the mayonnaise with the orange crush and mint leaves.
- Pour over the baked pears and garnish with toasted almond flakes. Serve on a bed of crisp lettuce leaves.
Chef's variation : Try a variation with strawberry, peaches, etc.

Fig and mango mousse
Ingredients:
figs - 500 gms
mango pulp - 500 ml
cream - 300 ml
gelatin - 2 tbsp
lime juice - 1 tsp
Method:
- In a bowl mix together the mango pulp, cream, gelatin, chopped figs (8 - 10 nos), lime juice, mix well and set to chill.
- Garnish with more figs all around and serve chilled.
Chef's variation : Try a variation with strawberry and figs, melon and figs, kiwi and figs, etc.
