Corn, chicken or chocolate? What's your poison... or should we say preference? Here are some quick and easy to make recipes that can be served to unexpected guests as well.

Corn on Toast

Ingredients:

Bread slices
Cooked corn, mashed*
Yogurt (Dahi)
Salt
Black pepper (Kali Mirch), freshly powdered
Coriander (Dhania) leaves, finely chopped
Green chillies (Hari Mirch)
Oil for deep-frying
*You can use canned corn cream style

Add to taste


Corn on Toast Method:
  1. Cut edges off the slices of bread and cut them into 4 squares each.
  2. Mix the corn, yogurt, salt, black pepper, coriander leaves and green chillies.
  3. Heat corn mixture over medium heat, stirring all the time, for 5-7 minutes or till well blended.
  4. Fry bread to a light brown and drain on absorbent paper.
  5. Heap the warm corn mixture on each piece of fried bread and serve.

Chilli Chicken Dry

Ingredients:
Boneless chicken, diced
Egg, slightly beaten
Corn flour/Cornstarch
Garlic paste
Ginger paste
Salt
Oil for deep-frying
Onions, thickly sliced
Green chillies, thickly sliced
Soy Sauce
Vinegar
Green chillies, slit, for garnish

1/2tsp (5 gm)
1/2tsp (5 gm)
1 tbsp or to taste
2 cups (300 gm)
2 tsp or to taste (remove the seeds if too hot)
1 tbsp (adjust according to strength)
2 tbsp


Chilli Chicken Dry Method:
  1. Mix together the chicken, egg, corn flour, garlic and ginger paste, 2 tsp salt, and enough water so that the chicken pieces are 'coated' with the batter. Leave thus about 1/2an hour.
  2. Heat the oil and deep-fry the chicken pieces over high heat to begin with and then lower the heat till chicken is cooked through. Drain on absorbent paper till required.
  3. Heat 2 tbsp of the oil in a wok, add onions and stir-fry over high heat till they look 'wet'.
  4. Add the green chillies and stir a few times, add the remaindered salt, soy sauce, vinegar, and the chicken.
  5. Mix well, and serve garnished with the green chillies.

Rich Chocolate Cake

Ingredients:
Flour (Maida)
Sugar, powdered
Cocoa powder
Baking powder
Baking (Meetha) soda
Salt
Butter, Cream or Oil
Vanilla Essence
Eggs
Hot Water
Cake tins, 23cm (9") round, or 20 cm (8") square
2 cups (240 gm)
1 3/4 cup (420 gm)
2/3 cup (65 gm)
1 tsp
1 tsp
1/2tsp
2/3 cup (160 gm)
1 tsp
3
1 cup (240 ml)

Rich Chocolate Cake Method:
Oven Temp: 350 F-180C

  1. Prepare cake tins as in Sponge cake.
  2. Sift the flour, cocoa, baking powder and soda into a mixing bowl.
  3. Add the salt, butter/cream/oil, vanilla and eggs and beat with a wooden spoon or electric beater.
  4. Add the hot water and continue to beat till smooth and glossy.
  5. Divide the batter into the two tins and bake in a pre-heated oven for 30-35 minutes or till a skewer inserted in the middle comes out clean.
